Tufahije (a traditional Bosnian delicacy)
Tufahije
Now that we've enjoyed pie, salad, and the main course, it falls upon me today to contribute something sweet to our culinary journey.
Today, I am excited to introduce you to the traditional Bosnian delicacy known as Tufahije, which is made from only a few ingredients. This is one of the most beautiful old-fashioned delicacies, which makes the house smell wonderful for days.
"Tuffah" in Arabic translates to apple, serving as the origin of the name "Tufahije." The recipe for preparing this delicacy was brought to Bosnia by the Turks.
For crafting Tufahije, opt for greener apples that are firmer and smaller in size, with Granny Smith being an ideal choice, although other varieties can also be utilized.
Tufahije are a real energy bomb and their taste is hard to forget.
Prep Time: 20 minutes
Level: Easy
Servings: 6 people
Ingredients needed:
10 smaller apples
500g of sugar
500 ml of water
150g of ground walnuts
squeezed lemon juice
sweet cream or whipping cream
50 ml of milk
a bag of vanilla sugar (10g)
Preparation:
Peel and core your apples with a knife (make sure you remove all the seeds from the apple and widen the middle to ensure the filling will fit inside each apple.)
Pour water, sugar, and lemon juice into a cooking vessel to make sugar syrup, “agda”. When the syrup boils, gently lower the apples.
Cook for 15 minutes, making sure that the apples do not fall apart. First, cook one side of the apple, then gently turn the other side of the apple, if they do not turn themselves.
The lemon helps us keep the apples bright during cooking just as the large amount of sugar in the syrup helps us to keep the apples from falling apart.
Remove the apples from the syrup. Leave to cool, first at room temperature, then in the refrigerator for an hour.
Pour hot milk over the ground walnuts, mix with vanilla sugar (you can also use a spoonful of melted butter), then firmly fill the center of the apple with walnuts.
Put the stuffed Tufahije in a glass container and cover it with the remaining syrup.
Decorate the apples with whipped cream and sprinkle them with ground nuts, then put them back in the fridge until serving.
Cooking tip: You can play with it and make a mix of walnuts and ground biscuits, or use almonds or hazelnuts instead of walnuts... Pears can also be used instead of apples
